Sri Lanka, March 18 -- I'm blessed with a six-year-old picky eater. As most mums with picky eaters can relate, meal time is antagonizing and difficult for both parties involved. I have eagerly waited for my beautiful boy to start showing a liking towards something which I can make for both of us, FINALLY thanks to ''Hey Duggee" we have found a match. So here goes, our take on a simple, quick and easy Shashuka full of protein.

Ingredients (Serves 1) 3 eggs One small bell pepper chopped (we love the red) 3 tomatoes finely minced Two medium sized onions chopped 3 cloves garlic minced Salt to taste Pepper according to your taste Paprika according to taste One tablespoon olive oil One tablespoon butter Chopped cilantro (optional) Chopped mushroom (optional) Chopped spinach (optional) Crumbled fetta cheese (optional) Toasted bread/ Chapati or any rotti that your prefer

Method In a 9 inch skillet add the butter and olive oil. Once both butter and oil are heated add in the garlic and onion. Once the garlic and onion have started to cook add in the bell pepper, mushroom, spinach (optional) and let it cook for 2 minutes. Then mix in the finely chopped tomato (canned tomatoes or tomato puree can also be substituted) add salt, pepper and paprika. Cook everything for 5 to 6 minutes. Finally crack in the eggs on top of the mixture and poach them to your preference. Add the cilantro and fetta cheese for flavour and garnish. Once the eggs are cooked to your liking, dig in with a warm toasted slice of bread or rotti! Enjoy!
