Sweet Traditions and the Magic of the Yule Log

Classic Chocolate Yule Log Ingredients

For the sponge:

4 large eggs 100g caster sugar 65g plain flour 40g cocoa powder Half tsp baking powder Pinch of salt For the filling:

200ml double cream 1 tbsp icing sugar Half tsp vanilla extract

For the icing:

150g dark chocolate 150g unsalted butter 200g icing sugar 2 tbsp cocoa powder

Method

Preheat oven to 180C (160C fan). Line a Swiss roll tin with baking parchment. Whisk the eggs and sugar until pale and thick. Fold in the sifted flour, cocoa, baking powder and salt. Bake for 10-12 minutes. Turn out onto a sugared tea towel, remove parchment and roll while warm. Cool. Whip the cream with icing sugar and vanilla. Unroll, fill and re-roll. Melt chocolate and butter; beat in icing sugar and cocoa. Frost and texture with a fork; dust with icing sugar.
