ALEXANDRIA, Va., June 4 -- United States Patent no. 12,317,905, issued on June 3, was assigned to General Mills Inc. (Minneapolis).
"Low sugar, high protein confection" was invented by Eric T. Gugger (Plymouth, Minn.), Michael Li (St. Louis Park, Minn.) and Eva Ordovas (Tarazona, Spain).
According to the abstract* released by the U.S. Patent & Trademark Office: "A low or no sugar, high protein confection is described. A confection includes a beneficial combination of soluble fiber, whey protein, glycerol and fat at an acidic pH and particular Brix range to mimic the texture and mouthfeel of caramel or cream confection. Methods of making a confection are also described."
