ALEXANDRIA, Va., July 3 -- United States Patent no. 12,342,836, issued on July 1, was assigned to CHUNK FOODS INC. (New York).
"Methods of manufacturing protein-based meat analogs" was invented by Amos Golan (Tel Aviv, Israel), Itay Uri (Kfar Sirkin, Israel) and Fabio Zon (Tel-Aviv, Israel).
According to the abstract* released by the U.S. Patent & Trademark Office: "Fermented meat analogs and methods of producing such meat analogs, the meat analogs comprising protein-containing strands, and a mycelium of a fermenting microorganism, wherein the protein-containing strands are held together or bound together by the mycelium to form the fermented meat analog."
