The victory in the Netherlands means Scotland, reigning League 2 winners, sit fifth in the eight-team table with 16 points.
Scotland defeated the division's bottom-placed side with 22 balls remaining thanks to Munsey's efforts and 58 by Brandon McMullen on Sunday, the BBC reported.
Mark Watt took two wickets to become only fourth Scotland player to reach 200.
UAE remain in bottom spot having taken only four points.
The teams meet again on Thursday in another one-day international before Scotland take on
the host nation two days later.
