"In 2026, gourmet coffee in India is all about personalisation, sustainability and innovation. Functional coffee with adaptogens and protein blends is trending, reflecting a shift toward wellness," says Chetan Sharma, Food and Beverage Manager at Jaisalmer Marriott. He adds, "Digital platforms and home brewing culture are fuelling this growth, making coffee not just a beverage but a lifestyle statement." Chetan further points to the evolution of cafes into immersive social spaces, where experience matters as much as the brew itself. "Multi-sensory cafe environments are positioning coffee shops as 'third places,' integrating design, music, lighting, and events into the coffee experience," he says, adding, "Plant-based menus are now standard, with oat, soy, and almond milk options. Further, gourmet pairings, such as coffee matched with artisanal chocolates and savory bites, are transforming drinks into curated tasting experiences."
