India, Feb. 21 -- Her love for India and local food is evident when you talk to her. Chef Helly Raichura, an Australian chef of Indian origin, likes to travel to India every year to find inspiration for the food she serves. This year, she spent a few days in Kerala, soaking in the local culture and flavours. "For me, it is essential to visit the region from where my next menu is. It gives a deep understanding of the food, the produce, the culture and the people. The markets tell you which vegetables, fish and meats are used locally and the street food gives you an understanding of the flavour profile that the masses enjoy. A part of my trip always involves eating a home-cooked meal," says Raichura, who runs Enter Via Laundry, an Indian fine diner in Melbourne. She adds, "When I recreate these menus in Melbourne, it gives my dishes a strong base."...
